Timo is Puglia in a glass: a crisp, aromatic Vermentino (also known as Rolle), fermented cool in stainless steel and matured five months in steel to keep every ounce of freshness. Straw yellow in colour, it opens with white flowers and citrus over a whiff of Mediterranean scrub, then turns elegant and mineral on the palate with hints of thyme and rosemary. At 12.5% it is light, lively and made for the table: fish starters, seafood, light pasta, or simply a sunny afternoon. Serve at 10-12°C. Named after the Italian word for thyme, and very easy to like.
